The weather made it so I had to do an indoor run today so I stopped to take a shot of the snow in motion before I headed into the arena. It almost blew me over!

Hello Tulip!
A pot of tulips I purchased as part of the Lung Association's annual fundraiser. When I came into work this morning the bud was closed but by quitting time it had opened to reveal a bit of spring! (Even though the weather later that night would disagree!)

Penne With Squash & Black Beans
In a large skillet over med heat fry 1 onion, chopped, 2 cloves of garlic minced, 1 bell pepper chopped, 3 cups cubed and peeled butternut squash, chopped, 1 1/2 tsp of rosemary (or sage) and 1/4 tsp each salt and pepper, until onion is soft, about 5 minutes. Add 3/4 cup vegetable stock and bring to a boil; reduce heat, cover and simmer until squash is tender, about 12 minutes. Add 1 can black beans, rinsed and drained; heat through. Meanwhile, cook pasta according to directions. Drain and return to pot, reserving 3/4 cup of cooking liquid. Add squash mixture, toss to coat. Add cooking liquid if necessary. Top with goat cheese or Parmesan.
I used some of the leftover squash mixture the next day to make burritos. Yum!

White Bean & Mushroom Stew
Heat 2 TBSP olive oil in a medium saucepan over medium heat. Cook 1 onion, chopped, 1 celery stalk, diced, and 1 carrot, peeled and diced until tender, about 8 minutes. Increase heat to medium-high, add 1 lb mushrooms, quartered and cook until softened, 5 to 7 minutes. Deglaze with 1/2 cup white wine, scraping up any brown bits with a wooden spoon. Add 1 28 oz can crushed tomatoes (or whole tomatoes pureed), 1 tsp oregano (called for one sprig fresh rosemary which I did not have), 2 cups cooked chickpeas rinsed and drained (or any white beans), and 1/2 cup chicken broth or water. Bring to a boil; reduce heat and simmer until slightly thickened, about 15 minutes. Season with salt and pepper. Serve with a drizzle of oil. Adapted from Whole Living.

Add 2 leeks, white and light green parts only sliced into thin half moons and rinsed well, and 3 celery stalks thinly sliced; cook until softened, 8 minutes. Add artichokes (calls for 2 frozen packages thawed and coarsely chopped but I only had canned), 1/2 cup chicken broth, and 8 oz goat cheese (called for Neufchatel cheese) and stir to combine. Remove skillet from heat, add 2 TBSP fresh lemon juice, and season with salt and pepper. Brush a 1 1/2-quart baking dish with oil. Chop 2 sweet potatoes (or russet) very thin. Arrange half potato slices in a single layer, overlapping slightly; season with salt and pepper. Top with artichoke mixture; smooth top. Layer with remaining potatoes, brush with 2 teaspoons oil, and season with salt and pepper. Bake until sauce is bubbling and potatoes are golden and tender, 35 to 40 minutes. Roasted Cauliflower with Goat Cheese & Lemon.
Preheat oven to 425. In a medium bowl toss 1 head cauliflower, cut into florets, with 1 tbsp plus 1 tsp olive oil; season with salt and pepper. Arrange in a single layer on a rimmed baking sheet and roast until tender and browned in spots, 15 minutes. Let cool 5 minutes. Return to bowl and add crumbled goat cheese and 1 tsp lemon juice. Toss to combine.

Sauteed Greens With Garlic.
Remove stems and midribs from 2 med bunches green chard. Cut stems and ribs into 1/2 pieces. Chop leaves. Rinse well but do not dry. Heat 2 tbsp olive oil, 2 cloves garlic, thinly sliced and a pinch of red crushed red pepper flakes over med-low until the garlic is just beginning to colour. Ad the stems and ribs, salt and cook, stirring occasionally until nearly tender, about 2 minutes. Add the leaves and cook, partially covered, until both the leaves and stems are tender, 3 to 5 minutes more. Season with the juice of 1/2 lemon or 1 1/2 tbsp red wine vinegar. Add one shallot thinly sliced, 1 garlic clove minced and 1 tbsp freshly minced ginger and cook until fragrant, 1 to 2 minutes. Add soba noodles to skillet, along with 3 cups baby spinach. Toss until spinach is wilted and noodles heated. Add 2 tsp soy sauce and 1 tsp sesame oil and toss to combine.

Rinse and drain one can of chickpeas, add grape or cherry tomatoes, halved. Dress with simple lemon vinaigrette (Dissolve salt in 1 tbsp lemon juice, add 3 tbsp olive oil, shake - may want to double dressing amount). Top with freshly ground pepper.
Also good with chopped red onion and goat cheese or feta. Served over a bed of baby spinach it's a nice salad meal.
